New Crop Harvest — Why It Matters

Every drum is made exclusively from the current-season tomato crop, harvested at peak ripeness. Compared with aged stock, the new paste offers higher natural sugar, fuller body and a more vivid red color.

Hot Break Process

In the hot break method, freshly harvested tomatoes are preheated above 85°C immediately after crushing to deactivate enzymes, then refined into a paste with thicker consistency and higher viscosity, ideal for ketchup and sauces.
